Coconut Milk Smoothie
Many parents find it difficult to get their children to eat vegetables. Spinach is very healthy and also very hard for some children to accept into their diet. My 4 year old will not eat spinach and also will pick out anything green in food if she thinks that it is spinach. However, when I make her smoothies, I always include some spinach leaves and she never detects the presence of spinach. I always serve her smoothies in opaque cups with lids so that she won't complain about the color.

The combination of the coconut milk and banana make this smoothie sweet which will please even the pickiest eaters.
Coconut Milk Smoothie
Ingredients
- 1 cup light coconut milk
- 1 banana
- 2 cups raw organic spinach
- 1/2 cup of ice
Directions
Combine all ingredients in blender and blend until smooth.
This recipe makes 1 large 18 ounce serving or 2 smaller 9 ounce servings.
