carrot salad
Many recipes for carrot and raisin salad are made with mayonnaise. This version is made creamy with non-fat yogurt, making it even more nutritious.
Ingredients
- 1/2 cup nonfat yogurt
- 1 1/2 tablespoons honey
- 1 tablespoon lemon juice
- 1/4 teaspoon cinnamon
- 2 cups carrots, shredded
- 1/2 cup raisins
- 1/4 cup crushed pineapple, drained
Directions
- Combine yogurt, honey, cinnamon and lemon juice to make dressing.
- Add the rest of the ingredients and mix well.
- Chill at least 15 minutes.
