Fruit-N-Fudge
One way to reduce your carbon footprint is to change your habits when it comes to purchasing and preparing foods. Big Green Cookbook is a wonderful resource that includes tips on how to live a low carbon lifestyle while preparing delicious food.
Two of the "rules" included in the book are to eat by season and buy local. Spring and summer are great seasons to sample locally grown produce in southeastern NC. Currently, strawberries are readily available at local farms. Although they are delicious on their own, Big Green Cookbook offers this divine recipe for "fruit-n-fudge".
Ingredients
- 3/4 cup turbinado or Demerara sugar
- 1/2 cup plain unsweetened soymilk or whole organic milk
- 1/2 teaspoon pure vanilla extract
- 1 ounce high-quality unsweetened dark chocolate, finely chopped
- 4 cups bite-sized strawberries (or seasonal fruit of choice)
Directions
- Combine the sugar soymilk and vanilla extract in a small saucepan. Stir in the chocolate and place over medium heat. Cook while stirring occasionally until the sauce is bubbling, about 6 minutes. Then continue to cook while stirring constantly until the sauce is a rich brown color, nearly smooth and just beginning to thicken, about 6 minutes.
- Turn off the heat and cover. Let "lid cook" (cook covered while the burner is off) for 5 minutes. Remove from the heat and stir continuously until silky smooth and desired thickness, about 5 minutes.
- To serve, drizzle it over the fruit or enjoy it as a dipping sauce.
