Grilled Corn
No cookout is complete without food prepared on the grill. One of the easiest (and yummiest!) side dishes that can be grilled up right beside your burgers and hot dogs is grilled corn. The steps to grilling a delicious ear of corn are simple. Start out by preheating the grill to medium. Then pull your husks down to the stalk end without removing them. Remove any silks, then put the husks back up and secure with kitchen twine to protect the corn as it grills. Now you’re ready to grill the corn for 15 minutes or until tender, turning occasionally.

- BACON-CHEDDAR: Spread mayonnaise onto still warm corn. Roll in 1/2 cup grated cheddar cheese and 5 strips cooked bacon, chopped.
- MEXICAN-STYLE STREET CORN: Spread mayonnaise on still warm corn. Roll in 1/2 cup crumbled cotija or feta cheese. Sprinkle with chili powder. Serve with lime wedges for squeezing.
- PIZZAIOLA SPREAD: Grate 2 vine-ripe tomatoes, seeded, using a coarse box grater, then strain and press out excess liquid. Stir in 2 tablespoons grated Parmesan cheese, 1-2 teaspoons finely chopped basil and 1/4 teaspoon salt. Spread on corn.
- TOASTED SESAME BUTTER: Stir together 4 tablespoons salted butter, softened, 1 teaspoon white sesame seeds, 1/2 teaspoon finely chopped cilantro, and 1/4 teaspoon toasted sesame oil. Spread on corn, then sprinkle with extra sesame seeds.
- GARLIC–OLD BAY BUTTER: Stir together 4 tablespoons salted butter, softened, 1 small clove garlic, pressed, and 1/4 teaspoon Old Bay seasoning. Spread on corn, and then sprinkle with more Old Bay if desired.
