Sugar Roasted Ginger Carrots
Serves 4-6
Prep time: 10 minutes
Cooking time: Approx. 30-45 minutes
Ingredients:
- Large carrots 5 peeled
- Brown sugar ¼ cup
- Fresh ginger 3 slices
- Maple syrup ¼ cup
- Sea salt to taste
- Sunflower oil drizzle
- Fresh parsley garnish
Tools:
Large glass baking tray and foil
Directions:
- Preheat oven to 350 degrees.
- Peal and slice the carrots up (in long strips). Season them with brown sugar and large chunks of fresh ginger.
- Drizzle the maple syrup and sunflower oil, then season with sea salt. Cover with foil and then bake in the oven until cooked.
