Freshalicious by Stacey Fokas isn’t just a cookbook, it’s a food journey.  It helps readers discover the importance of connecting with local farmers and where food comes from.  The author’s daughter was born with an allergy to dairy so she spent ten years creating the tasty, dairy-free recipes found in the book.  It includes over 125 seasonal recipes that are healthy as well as flavorful. 

Here is a great recipe from Freshalicious for a side dish that the whole family is sure to love!

Sugar Roasted Ginger Carrots

Serves 4-6

Prep time: 10 minutes

Cooking time: Approx. 30-45 minutes

Ingredients:

  • Large carrots      5 peeled
  • Brown sugar       ¼ cup
  • Fresh ginger       3 slices
  • Maple syrup       ¼ cup
  • Sea salt                 to taste
  • Sunflower oil     drizzle
  • Fresh parsley     garnish

Tools:

Large glass baking tray and foil

Directions:

  • Preheat oven to 350 degrees.
  • Peal and slice the carrots up (in long strips).  Season them with brown sugar and large chunks of fresh ginger.
  • Drizzle the maple syrup and sunflower oil, then season with sea salt.  Cover with foil and then bake in the oven until cooked.
