Rush Hour cookbook

Searching for a small token of appreciation to give some special people in your life?  A crispy snack mix in a small bag adorned with a ribbon is a perfect gift for teachers, co-workers and others that touch our lives daily.  The cookbook entitled Rush Hour Recipes from Gooseberry Patch offers a unique snack mix recipe that is so simple to make that you can include the kids in the preparation!

Tropical Snack Mix

  • 8 cups bite-size crispy corn cereal squares
  • 2 cups dried pineapple chunks
  • 2 cups dried banana slices
  • 1 cup sweetened dried cranberries
  • 1 cup sliced almonds
  • ¼ cup butter melted
  • ¼ cup sugar
  • ¼ cup frozen pineapple juice concentrate

In a large microwave-safe bowl, toss together cereal, fruit and nuts.  In a separate small bowl, mix remaining ingredients; drizzle over cereal mixture.  Microwave, uncovered, on high setting for 5 minutes, stirring every 2 minutes.  Spread on wax paper to dry.  Store in an airtight container.  Makes about 14 cups.
